Perfect dinner. Little bit of fat burning heaven.
Southwest Stuffed Sweet Potatoes:

Ingredients
- 2 lb chicken breasts (measured raw)
- 3 large sweet potatoes
- 3/4 cup black beans
- 1 cup broccoli
- 1/2 cup corn
- 2 vine tomatoes
- 2/3 bell pepper
- 3 red or green onions
- 1 zucchini
- 5 tbsp mozzarella (Optional)

Instructions
- Wrap 3 large sweet potatoes in tin foil and bake in oven on 400 degrees for 75 minutes.
- On the stove cook 1/2 red onion with 1T of olive oil for 2 minutes.
- Then add 1tsp of minced garlic and cook for 1 more minute add 1tsp cumin and 1/2 tsp Chili powder and pinch of salt.
- Add 3/4 cup of black beans. 1/2 cup frozen corn. Add 1 cup salsa or diced tomatoes.
- Finally, add 2 cups of your choice of chicken!
- We did chipotle chicken. I also added two strips of turkey bacon mix on heat!
- Once the potatoes are done pull them out and spoon out part of the potatoes to hollow them out a little. Stuff them with the mixture.
- Then add a little mozzarella cheese on top! Warm in the oven for another 5 minutes! SO YUM.

January 6, 2017I had large potatoes and a big side of veggies so I ate half a potato per serving, so 3-6 servings depending on size.
