Healthy Coconut Fudge Brownies

Ever hear this before? “Nothing tastes as good as being fit feels.”

It’s all over the #fitspo posts on Instagram. Sometimes it might even refer to a specific food, but the basic idea is always the same…

You have to restrict your diet to be fit. But it’s okay, because being fit feels better than *insert favorite food* tastes.

It just isn’t true.

And anyone that actually believes it, probably hasn’t had really good brownies. Or cookies. Or cake. Or ice cream.

But the lie isn’t a lie because food tastes good. (Even though, let’s be real, food is friggin’ delicious.) The lie is a lie because it perpetuates the idea that you can’t eat food you enjoy and be fit.

Good news…

You can—and should—enjoy delicious food while you get amazing results.

Better news… I’ve got a recipe that’ll help you do exactly that. Guys, healthy coconut-fudge brownies.

 

They’re chocolatey. They’re coconut-y. And they’re incredible.

Best part? These brownies will actually help you get better results.

Healthy Coconut Fudge Brownies
Healthy Coconut Fudge Brownies
Prep Time 5 minutes
Cook Time 15 min minutes

Ingredients
Brownies
  • 1 Whole Sweet Potato 1.5-2 cups mashed
  • 4 tbsp Almond or other nut butter
  • 2 tbsp Cocoa powder
Topping
  • 1 cup Dark Chocolate chips or chocolate of choice
  • 1 cup Coconut cream/milk Heavy whipping cream also an option if extra creamy is desired
  • Unsweetened Coconut Flakes
Prep Time 5 minutes
Cook Time 15 min minutes

  • 1 Whole Sweet Potato 1.5-2 cups mashed

Topping
  • 1 cup Dark Chocolate chips or chocolate of choice
  • 1 cup Coconut cream/milk Heavy whipping cream also an option if extra creamy is desired
  • Unsweetened Coconut Flakes

Instructions
Brownies
  1. Cut up sweet potato and place in pot to boil on high heat for 8-10 mins then smash them up.
  2. Measure out nut butter and melt in microwave.
  3. Add all ingredients(sweet potato & cocoa powder) while nut butter is hot/liquid and stir up
  4. Place mixture into a non stick/greased pan and put in oven at 350 degrees for 25-30mins
  5. Pull out of oven and add topping then let sit in the fridge to cool and set or eat up while they're Hot!
Topping
  1. Place ingredients in a microwaveable bowl, heat for 20-30 seconds is all it takes to get the chocolate soft.
  2. Take out of microwave and stir up until a nice smooth cream forms, longer you stir thicker & creamier it gets 🙂
  3. Add topping to the brownies and then place coconut flakes as desired

    How many calories Per one piece? How much sugar is in this?

    Yes, nutrition info would be nice! Would a chocolate protein powder be an acceptable addition?
