Southwest Stuffed Sweet Potatoes

Ingredients

Instructions
Wrap 3 large sweet potatoes in tin foil and bake in oven on 400 degrees for 75 minutes.
On the stove cook 1/2 red onion with 1T of olive oil for 2 minutes.
Then add 1tsp of minced garlic and cook for 1 more minute add 1tsp cumin and 1/2 tsp Chili powder and pinch of salt.
Add 3/4 cup of black beans. 1/2 cup frozen corn. Add 1 cup salsa or diced tomatoes.
Finally, add 2 cups of your choice of chicken!
We did chipotle chicken. I also added two strips of turkey bacon mix on heat!
Once the potatoes are done pull them out and spoon out part of the potatoes to hollow them out a little. Stuff them with the mixture.
Then add a little mozzarella cheese on top! Warm in the oven for another 5 minutes! SO YUM.
