Ingredients
  • 2 lb chicken breasts (measured raw)
  • 3 large sweet potatoes
  • 3/4 cup black beans
  • 1 cup broccoli
  • 1/2 cup corn
  • 2 vine tomatoes
  • 2/3 bell pepper
  • 3 red or green onions
  • 1 zucchini
  • 5 tbsp mozzarella (Optional)

  • 3/4 cup black beans

  • 1/2 cup corn

Southwest Stuffed Sweet Potatoes
Instructions
  1. Wrap 3 large sweet potatoes in tin foil and bake in oven on 400 degrees for 75 minutes.
  2. On the stove cook 1/2 red onion with 1T of olive oil for 2 minutes.
  3. Then add 1tsp of minced garlic and cook for 1 more minute add 1tsp cumin and 1/2 tsp Chili powder and pinch of salt.
  4. Add 3/4 cup of black beans. 1/2 cup frozen corn. Add 1 cup salsa or diced tomatoes.
  5. Finally, add 2 cups of your choice of chicken!
  6. We did chipotle chicken. I also added two strips of turkey bacon mix on heat!
  7. Once the potatoes are done pull them out and spoon out part of the potatoes to hollow them out a little. Stuff them with the mixture.
  8. Then add a little mozzarella cheese on top! Warm in the oven for another 5 minutes! SO YUM.

      Hi Andra. This recipe calls for 3 large sweet potatoes.

    This is an awesome recipe!! This is my 2nd time making them, first I didn’t add any meat and it was still delicious. I am adding chicken today and cant wait to dig in!

      I had large potatoes and a big side of veggies so I ate half a potato per serving, so 3-6 servings depending on size.
